We're not having a wedding. What next?

well after you're legally married and you have your courthouse shindig, mail out announcements to your close friends and extended family, whoever you would have invited to your wedding. go on snapfish.com and design something cute with your picture or whatever. some people may send you gifts or cards, most probably won't. I don't know the etiquette for acknowledging an announcement but I don't think it requires a gift. have both sets of parents over for dinner and tell them you did it, break out some champagne and maybe get each pair a gift just to thank them for all their parental support.
